This recipe is actually from my mother-in law. She adds cookies to the bottom of the flan. It tastes amazing. You will need a pressure cooker and a deep aluminum pot without a handle to fit inside of the pressure cooker.
- 1 can of evaporated milk
- 1 can of white sugar (using the same evaporated milk can)
- 1/2 can of water (using the same evaporated milk can)
- 5 Eggs
- 1 teaspoon of vanilla extract
- Pinch of salt
Step 1: Put milk, water, sugar and vanilla extract in a pot to bowl. Once it has started to bowl, put it aside to let it cool down.
Step 2: Mix 5 eggs in a blender with a pinch of salt. After milk has completely cooled then add it to the egg mixer in the blender.
Step 3: Making the caramel. Add 5 tablespoons of sugar to an aluminum pot that does not have a handle since it will go inside of a pressure cooker. Put low heat on the pot. You will see the sugar start to get a light brown color. Move the pan in a circular motion so that the walls of the pan have the coating of sugar on it.
Step 5: Put the mixture from the blender into the pot with the caramel in it. Add about 1/4 of water to a stove top pressure cooker. Cover the top of the pot with aluminum foil and place it inside of the pressure cooker.
Step 6: Set the stove to medium heat. After you have the valve on the pressure cooker, leave it on the stove for 15 to 20 minutes.
Step 7: Take the pressure cooker off of the stove top. After pressure has been released, remove the pot from the inside of the pressure cooker and remove the aluminum foil. Add a layer of cookies (Nilla vanilla wafers are great for this). Put back on the aluminum foil. Place the pot inside of the pressure cooker again and give it another 5 minutes of pressure. Turn off the stove and let it sit.
It is important to let the flan cool off completely before trying to remove it from the pot. Use a knife to separate the flan from the walls of the pot. Place a plate on top of the pot and flip it over.
