Egg and Kale Breakfast Muffins

Below is a recipe from Off Grid with Dough & Stacy.  A couple of ingredients were not given exact measurements. For a demonstration, click on the video below.


  • 6 Eggs
  • 2 cups of chopped Kale or Spinach
  • 1 cup of grated Cheese
  • 2 Pinches of Oregano
  • Black Pepper
  • Garlic
  • 2 pinches of Salt
  • 1/2 cup of plain Yogurt
  • 1 tablespoon of water

Step 1: Mix all of the ingredients in a bowl.

Step 2: Melt button on muffin tray and spread using a tortilla or flatbread.  Cut the tortilla or flatbread the bottom of each muffin container.

Step 3: Put the tray in the oven for 15 minutes at 350 degrees.  (After taking the tray out of the oven, add cheese if desired.)
